Blueberry Donuts

Ingredients

  • 1 cup almond flour
  • 1 cup tapioca flour
  • 1 cup blueberries
  • juice from 1 lemon (about 2-3 tbsp)
  • 2 eggs
  • 2 tbsp maple syrup
  • 1/4 cup melted coconut oil (plus more for greasing)
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • pinch salt

Instructions

  1. Preheat oven at 350 degrees.

  2. In a large bowl, combine almond flour, tapioca flour, baking soda and salt.

  3. In a separate bowl mix eggs, maple syrup, coconut oil, lemon juice and vanilla extract.

  4. Mix wet ingredients into dry ingredients. Make sure everything is mixed well.

  5. Grease a donut pan and scoop batter into each donut mold.

  6. Evenly distribute blueberries into each batter filled donut mold.

  7. Bake for 18-20 minutes or until toothpick comes out clean.

  8. Let cool for 5-10 minutes and enjoy.
