Turkey Sliders with Beet Slaw and Mashed Avocado

These Turkey Sliders with Beet Slaw and Mashed Avocado are so delicious, healthy and such a crowd pleaser. Made with lean ground turkey, fresh veggie filled Beet Slaw with a tangy-sweet dressing, mashed avocado to top to off while adding some healthy fats. These flavorful turkey sliders sure won't disappoint!

Ingredients

Turkey Patties

  • 1 lb ground turkey
  • 1 green onion
  • 1 tbsp fresh parsley
  • 2 cloves of garlic
  • 1 tsp apple cider vinegar
  • 1 tsp pink salt
  • 1/2 tsp pepper
  • 1 tbsp extra virgin olive oil

Beet Slaw

  • 1 beet
  • 1 large carrot
  • 1/3 cup grated purple cabbage
  • 1/2 cup finely chopped kale

Slaw Dressing

  • 1/4 cup mayo (I use avocado oil based)
  • 1 tsp dijon mustard
  • 2 tsp coconut sugar
  • 1 tsp apple cider vinegar
  • 2 tsp lemon juice
  • 1/2 tsp pink salt

Mashed Avocado

  • 2 hass avocados
  • 1/4 tsp pink salt
  • squeeze lemon juice

For Serving

  • 6 mini burger buns

Instructions

For Beet Slaw:

  1. Peel beet and carrot and grate both. Shred cabbage and finely chop kale. Combine all ingredients in a large mixing bowl. In a small bowl whisk together the ingredients for slaw dressing. Pour dressing over beet slaw and toss making sure the salad is well coated with dressing. Refrigerate until the rest of ingredients are ready and sliders are ready to be assembled and served.

For Mashed Avocado:

  1. Cut avocadoes down the middle and remove pit. Scoop out of skin and place in a medium bowl. Use potato masher or fork to mash avocados. Add salt and a squeeze of lemon juice and mix together. Set mashed avocados aside.

For Turkey Sliders:

  1. Finely chop green onion and parsley, and mince garlic. In a large mixing bowl, combine ground turkey, green onion, parsley, garlic, apple cider vinegar, pink salt and pepper. Mix together making sure all the ingredients are well incorporated into the turkey.

  2. Using an ice cream scooper, scoop out ground turkey and roll into a ball. Flatten and turn into a small patty that's about 3-4 inches wide and 1/2 inch thick. Repeat with the rest of ground turkey. You should end up with 6 mini turkey patties.
  3. Place a large cast iron skillet or any non-stick pan on stove-top. Drizzle extra virgin olive oil and bring to a heat on medium-high heat. Place turkey patties on heated surface and allow to cook until brown. About 5-6 minutes. Flip patties over and cook for another 5-6 minutes. Remove from heat and gather with the rest of the ingredients and begin to assemble sliders.

Assembling Sliders:

  1. Slice mini burger buns in half separating the top half and bottom halves. Set aside.
  2. Begin assembling your sliders; take both halves of sliced mini burger buns and separate them. Add a dollop of mashed avocado on the bottom half of the bun and spread. Place cooked turkey patty over mashed avocado. Carefully serve slaw over turkey, about 1-2 tbsp. Place top half of bun over slaw and press down carefully to set all ingredients together. Hold sliders together with a toothpick.

  3. Repeat with the rest of patties and ingredients and assemble the rest of sliders. Serve immediately and enjoy!

Recipe Notes

Tips and Substitutions:

  1. No mayo or not a fan?- substitute with Plain Greek Yogurt.
  2. Leave avocado pit in the mashed avocado- This will help prevent the avocado from turning brown while you prep the rest of the ingredients.
  3. Don't skip the apple cider vinegar- the acid in the acv helps get rid of that turkey after taste. Use lemon juice as a substitute.
  4. Try grilling the turkey patties- so flavorful!
