Pumpkin Donuts with Maple-Cinnamon Glaze

Ingredients

  • Donuts:
  • 1 cup almond flour
  • 1 cup tapioca flour
  • 1 cup pumpkin puree
  • 2 tbsp maple syrup
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 2 eggs
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp ground ginger
  • 1/2 tsp cloves
  • pinch pink salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • Glaze:
  • 1/2 cup maple sugar
  • 1 tbsp maple syrup
  • 1 tsp cinnamon
  • 2 tbsp unsweetened almond milk

Instructions

  1. Preheat oven at 350 degrees. 

  2. In a large bowl combine puree, maple syrup, coconut oil, vanilla extract, and eggs.

  3. In another bowl combine almond and tapioca flours, salt, cinnamon, nutmeg, ginger, cloves, baking soda and baking powder. 

  4. Combine wet ingredients into dry ones and mix well. 

  5. Grease a donut mold and scoop batter into it. Bake for 22 minutes.

  6. While donuts bake, put maple sugar through a swifter. Mix with the rest of the ingredients for the glaze.

  7. Let donuts cool for a few minutes.

  8. Once they have cooled remove them from mold and dip into glaze. 

  9. Sprinkle a bit more cinnamon on top if desired.
