In a food processor pulse dates into small pieces. (they'll probably stick together and make a ball).
In a medium sauce pan, combine maple syrup, cane sugar, and coconut oil and bring to a boil.
Stir in dates and bring down to simmer. Keep stirring until dates start to dissolve. About 5 minutes.
Add water to and let simmer for another 5 minutes. Remove from stove and pour on a flat dish.
Dip apples and coat generously. Works best if used immediately while still hot.
Dip in favorite toppings.
