Ingredients

  • 4 parsnips
  • 1 tbsp garlic powder
  • 1/2 cup grated parmesan cheese
  • 3 tbsp avocado oil
  • 2 tsp dried parsley
  • 1/2 tsp pink salt

Instructions

  1. Preheat oven at 375 degrees Fahrenheit. Line a large baking sheet pan with parchment paper. Peel pasnips and slice into 2-3 inch sticks. Spread parsnip sticks evenly throughout the baking sheet pan.

  2. In a small mixing bowl, combine parmesan cheese, garlic powder, salt and parsley. Whisk together until all ingredients are well combined. Drizzle avocado oil over parsnip sticks and rub it on making sure they are well coated with the oil. Sprinkle parmesan mixture over and rub throughout making sure parsnips are well coated with mixture as well. Spread any extra mixture over parsnips.

  3. Place prepped parsnip fries in the oven and bake for 22 minutes.

  4. Remove from the oven and garnish with fresh parsley if desired. Serve with some ketchup or your favorite dipping sauce! Enjoy!

Recipe Notes

Tips and Substitutions:

  1. Make sure to peel parsnips first- You want to get rid of the skin first before turning them into fries.
  2. Slice parsnips into 2-3 inch sticks- This makes for the perfect size and allows for the parsnips to bake evenly.
  3. It's ok for fries to get clumped up together in the oven- As parsnip fries bake in the oven and cheese begins to melt, it will cause for some if the fries to clump up. I personally like this, but if you don't, simply spread them out more before sprinkling with parmesan mixture. Or just break them apart as you serve them.
  4. No avocado oil?- You can use any other oil like coconut or olive.
  5. Substitute for Parsnips- Try this recipe with carrots! So good!
