Today is a very special day here the The Peachee Pear! Today Emma turns 2 years old!! Happy Birthday to my beautiful, smart, and funny little girl. She is the most amazing little girl I have ever met. I know this may sound biased being that I am her mother, but she is just so great. She is so smart and never seizes to amaze me. She also has the greatest personality and sense of humor. She knows what to do to make me laugh and does it on purpose and you can just tell she enjoys making others happy. These are such monumental qualities to posses at such a young age. Her personality is too big for her tiny little body.
From the day she was born she just captured the hearts of both her dad and I and everyone else who comes in contact with her. I just love her so much and can’t believe she is already two.
We are celebrating her birthday here in Colombia today at my grandmother’s house. We are having a small gathering with some family and friends and we are all so excited for it. I will have a recap of her birthday gathering within my trip recap with lots of pictures!
In honor of my baby girl’s birthday I am sharing one of her favorite recipes from her mother. Plus these are a treat so what better way to celebrate a birthday right?
Every time I make my Triple Chocolate Donuts she devours them. She makes a mess but it’s so cute to see her covered in chocolate. And then ask for more (lol). I love making these too. They are so fun to bake and then decorate with my favorite toppings. I’m so glad that Emma loves these so much because once she is old enough to bake with me we will have so much fun making these together. Not to mention how delicious they make the entire house smell. If you are a chocolate lover like me you will definitely appreciate how good these taste and smell.
These donuts are so moist, chocolaty and delicious. They will quickly become one of your family favorites. The best part, they are clean. These are gluten, refined sugar, refined flour, and dairy free. Super clean and guilt free. They are the perfect treat and best way to satisfy that sweet tooth and donut hankering. Do you ever get those? I feel like I do every now and then.
These can be great to have as a treat or even for breakfast. My husband always grabs a couple to take to work to have for breakfast or as a mid-morning snack whenever I make these. I like to give them to Emma as a snack or sometimes I also serve it as a side with some meals. My favorite way is definitely as a snack.
This is because I like to share my afternoon snack with her. It’s a little time we spend together and bond while we share a small treat. It’s something we have being doing since I been staying home with her and it has become a special mommy and daughter time between us. These is a special memory I know I will always have and share with my baby girl.
This is one of the things that I love about food and why I am so passionate about it. It brings us together and helps us create great memories in our lives. Sharing good food with our loved ones brings joy and comfort to us that not many other things in life can. This moment I share with my daughter in a day to day basis may seem like a very small part of our day but to me it is one of the most important times we spend together. I hope for it to become something of great meaning to her as well.
As you can see today’s recipe is very special to me. It’s Emma’s favorite which is why I am sharing it on her birthday. It reminds me of our bonding time over our afternoon snacks. And it helps me get rid of my donut cravings in a non-guilt way.
We like to have this with just the frosting or even with some toppings. They’re so good with just the chocolate frosting and that’s one of my personal favorite ways to enjoy these. I also like to top them with some fun toppings. Healthy toppings are also a great way to add some nutrition to these donuts. My go to toppings are colored sprinkles because these make them so fun for kids even though they’re not the healthiest. Coconut flakes and nuts are also my go to’s.
Start making these donuts. Start creating your own daily traditions with your kids and cherish them. Think of all the times food has brought you closer to your loved ones. Think of all the great memories that have been created while sharing your favorite foods with your favorite people. Don’t wait for a special occasion or cheat day to have your favorite meal. And for me, that’s what life is all about.
Triple Chocolate Donuts
- 1 cup almond flour
- 1/3 cup oat flour
- 4 eggs
- 3 tbsp raw cane sugar
- 3 tbsp cacao powder
- 1/3 cup semi-sweet chocolate chips
- 2 tbsp coconut oil
- 1/2 cup almond milk
- 1 tsp vanilla extract
- 1 tsp baking soda
- pinch salt
- 1/3 cup semi-sweet chocolate chips
- 2 tbsp coconut oil
- toppings of choice
Preheat oven at 350 degrees.
In a bowl mix almond and oat flour with cacao powder, cane sugar, baking soda and salt.
In a small sauce pan, melt chocolate chips with coconut oil.
In a large bowl beat eggs. Add in chocolate mixture.
Stir in almond milk and keep mixing until everything is well blended. Add vanilla.
Add wet ingredients to dry ingredients and mix until smooth consistency is reached.
Grease donut pan and scoop in batter.
Bake for 12-15 minutes. Remove from oven and let cool.
While donuts cool, melt the rest of chocolate chips and coconut oil in a small sauce pan.
Carefully remove donuts from pan and dip top in frosting.
Top with favorite toppings!
