Valentine’s Day Breakfast- Red Velvet Waffles

Welcome to our first week of our Valentine’s Day Series. Every Friday for the next few weeks I will be sharing a post with ideas on how you can celebrate the day with your family. I will have some recipes and meal ideas you can do for each meal of the day. In addition, I have also teamed up with other wonderful mom bloggers and I will be sharing activities and crafts from their blogs that you and your family can do on this special day. This series is going to be so much fun and get you ready to spend a beautiful and exciting Valentine’s Day with your family.

To kick things off we are going to start with our Valentine’s breakfast. For the food portion we have Red Velvet Waffles. These are gluten-free and dairy-free so of course they are clean waffles. These are made with beet puree to get that pretty red shade. No artificial coloring but instead an extra hint of veggie for some added nutrition. What better way to start a day full of excitement, love, and fun?

These waffles are super easy to make and you can even have your kids help out by pouring and mixing the ingredients. The full recipe is right at the end of this post.

If you don’t have a waffle maker, that’s ok. You can use this batter to make pancakes instead. These will work just as well and will be just as delicious as the waffles.

To top these I like to use coconut cream and O M G, it makes them so delicious! I also like to sprinkle some coconut flakes over it and perhaps some V-Day sprinkles to make this breakfast even more festive. I know the V-Day sprinkles are not healthy but it’s a holiday and everything else is healthy so it’s ok to indulge a little.

You can use any other toppings you prefer or have on hand. You can use whipped cream, strawberries, blueberries, maple or chocolate syrup or anything else you can think of. Set your table and decorate it with your favorite Valentine’s Day decorations. I love Valentine’s Day so I have tons of decorations at home. I get most of them from the dollar store or target. Just a few hearts here and there will set the tone and make your breakfast go from everyday breakfast to a Valentine’s Day special breakfast.

Red Velvet Waffles

  • 1 cup oat flour
  • 1/2 cup almond flour
  • 1/2 cup cacao powder
  • 1/2 cup beet puree
  • 1/4 cup maple syrup
  • 4 eggs
  • 2 tbsp melted coconut oil
  • 1/2 cup almond milk
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • pinch pink salt
  • coconut cream and valentines day sprinkles for topping


  1. In a large mixing bowl mix together oat flour, almond flour, cacao powder, baking powder and salt. 

  2. In another mixing bowl, mix together eggs, beet puree, coconut oil, almond milk and vanilla extract.

  3. Combine wet ingredients with dry ones and mix together until well blended. 

  4. Grease waffle maker with more coconut oil and pour batter into it. Cook according to waffle maker instructions. 

  5. Top with coconut cream and valetines day sprinkles.
