Mexican Cauliflower Rice Burrito Bowls

Lately I have come across many recipes of Mexican cauliflower rice and Mexican cauliflower rice burrito bowls on both Pinterest and Instagram. It seems to be go to healthy low-carb meal these days. So I decided to make my own easy uncomplicated version. I love burrito bowls (especially Chipolte’s with extra guac and I don’t care if it’s extra!!) and make them frequently for dinner and/or meal prepping lunches.

I have made a wide variety of burrito bowl combinations. I’ve made them with brown rice, quinoa, veggies, chicken, steak, shrimp, pico de gallo, and anything else you can think of. Substituting rice for cauliflower rice had yet been something I had tried though. I hadn’t even tried making Mexican cauliflower rice before this. I used to make Spanish rice all the time in the past but not so much now that I try to cook more on the healthy side. Spanish rice is very similar to Mexican rice and I love cauliflower rice so I knew I would love it. I make cauliflower fried rice very often in my household too so I was sure my family would like this version as well.

Making the rice was really the hardest part of this whole recipe. It is really easy to make and to put everything together. A great thing about this recipe is that you can add anything else you would like. I kept them as a vegan option because this is the way I served it for my family. You can also use some cheese, salsa, sour cream, and pico de gallo as some extra sides or substitute any of the ones on here. You can even add some protein by using grilled chicken, steak or shrimp. Next time I make this I will definitely be adding some shrimp.

This recipe also works great for meal prep. Make the rice and all of the sides ahead of time and put together in Tupperware for ready to go lunches. The only thing I would leave out is the guacamole. You can take avocado instead or substitute for other sides like the ones I mentioned above. It really is a great family friendly meal that everyone can enjoy. Mexican Cauliflower Rice Burrito Bowls

  • Rice:
  • 1 cauliflower head
  • 1 tbsp cumin
  • 1 tbsp paprika
  • 1/2 white onion
  • 2 garlic cloves
  • 1 tsp pink salt
  • 1 tbsp olive oil
  • Fajitas:
  • 3 multicolored peppers
  • 1/2 red onion
  • 1 tsp garlic powder
  • salt and pepper to taste
  • 1 tbsp olive oil
  • Guacamole:
  • 2 avocados
  • 1/2 tomato
  • 1/2 cup diced red onion
  • 1 tbsp fresh cilantro
  • juice from 1 lime
  • 1 tsp garlic powder
  • 1 tsp pink salt
  • 1/2 tsp pepper
  • 1 15 ounce can black beans (drained and rinsed)
  • 2 corns on the cob
  • lime, cilantro, green onions for garnish


  1. Start with slicing veggies for fajitas, dicing tomatoes for guac and finely chopping cilantro and garlic. 
  2. Place corn on the cob in a large sauce pan covered with water. Bring to a boil and cook until corn softens. 

  3. Remove stem from cauliflower head and run through food processor and chop into small pieces. 
  4. To start the rice heat olive oil on a skillet and sauté onions until translucent. 
  5. Add cauliflower rice and sauté until it cooks through. 

  6. While Sautéing the rice stir in cumin, paprika, salt and garlic. Garnish with fresh cilantro. 

  7. While rice is cooking, heat up olive oil in cooking pan and sauté fajita veggies. 

  8. Season with garlic powder, salt and pepper while it's cooking. 

  9. Keep rice and cooked fajitas warm. Check in corn to make sure it doesn't over cook.

  10. While corn finishes cooking, cut avocados open, remove seed and remove from skin. 

  11. In a large bowl add avocado, diced tomato and onions and mash together.

  12. Add lime juice, garlic powder, salt, pepper and cilantro. Mix all together and place seed to slow down browning.

  13. Remove corn from heat and chop kernels off. 

  14. If serving immediately, serve rice and fixins in separate bowls. If serving for meal prep layer all ingredients together in a Tupperware dish.
