Cheese Steak Zucchini Boats

Who doesn’t love a Philly Cheese Steak Sandwich? They are pretty delicious right? Unfortunately, they  pretty far away from being a healthy option. Even though this is a delicious sandwich, whenever I eat one I get a really bad stomach ache. It’s too much for my tummy to bare and digest. My husband on the other hand would eat these everyday if it was up to him. He really loves a good Philly Cheese Steak.

Even though the way this sandwich is cooked is really unhealthy, I like the veggies it has in it and how well they blend with the steak. Now, I also try to stay away from red meat and only have it every now and then or on special occasions. But, what really turns me off so much about not just this sandwich but sandwiches in general is the bread. It is way too much bread for me.

I figured I could cook the steak with the veggies in a much healthier way but I wasn’t sure how I could serve it. I didn’t want to just make this a healthier option by changing the seasoning and cooking method. I felt like keeping it as a sandwich still wouldn’t make it healthy if I was serving it in bread. So I thought about what can I substitute the bread with?

At first, I thought about maybe using cauliflower or eggplant to make a recipe for a low carb bread. But, I didn’t want to make this a complicated recipe that required too much cooking. After all, the reason why I wanted to make a healthy version of a Cheese Steak Sandwich was to have an easy meal to make on a weekend or on a busy night. Then it hit me, I can use a vegetable as my base and stuff it with the steak, veggies and cheese. What better vegetable than zucchini for this?

I have made zucchini boats before with other recipes and stuffed them with a number of different ingredients. No matter what you stuff zucchinis with, it always comes out delicious. I knew I couldn’t go wrong using zucchini boats for this particular recipe. So all I needed to do was get some shaved steak, peppers, onions, mushrooms, and cheese. Add some spices and herbs and make some delicious Cheese Steak Zucchini Boats to make a fun, healthy, tasty and quick meal.

Cheese Steak Zucchini Boats

  • 1 lb shaved steak
  • 1 tbsp dried oregano
  • 1 tbsp dried parsley
  • 1/2 tbsp garlic powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp liquid aminos (can substitute with low sodium soy sauce)
  • 1/2 tbsp cumin
  • juice from one lemon
  • 1/3 cup apple cider vinegar
  • 1 cup shredded mozzarella
  • 4 zucchinis
  • 1 red pepper
  • 1 green pepper
  • 2 cups sliced mushrooms
  • 1 red onion
  • few fresh parsley leaves for garnish


  1. In a small bowl make marinade by combining apple cider vinegar, oregano, parsley, garlic powder, salt, pepper, liquid aminos, lemon, and cumin.

  2. Pour marinade on shaved streak and let sit.

  3. Thinly slice onion and cook in a pan on medium heat until translucent. For about 2 minutes.

  4. Add marinaded steak and brown.

  5. Thinly slice red and green peppers and mushrooms. Add to cooking steak. Keep cooking for another 3-4 minutes.

  6. Preheat oven at 350 degrees.

  7. Halve zucchinis the long way and remove insides. Place them in oven save dish.

  8. Stuff zucchinis with cooked shaved steak. Top with shredded mozzarella.

  9. Place in oven and bake for 18-20 minutes.

  10. Garnish with fresh parsley and serve.

This is a low-carb and much healthier alternative to cheese steak sandwiches. Make it for your whole family as a healthy delicious meal. Perfect dinner everyone can enjoy!
