Green foods are my favorite foods. And that’s not just because green is my favorite color. Green fruits and vegetables have many essential vitamins and minerals. Spinach is my favorite leafy vegetable and I love it in my smoothies. Green smoothies are a must in my household. We have them pretty much everyday with our breakfast or sometimes it is breakfast for my husband and I. Emma has a green smoothie everyday too but I always make sure I give her something else with it like a hard boiled egg and some toast.
On the weekends when we have more time we like to make a big breakfast. When my husband takes over he usually makes regular pancakes or waffles. Me on the other hand, like to always keep it healthy. I do indulge however from time to time. I believe this is a very important part of leading a healthy lifestyle. Most of the time I still rather opt for healthier versions of our favorite foods though. I just feel much more energized this way.
So for those days we want a big breakfast I developed a recipe for Green Smoothie Pancakes. Like this, I’m still technically having my green smoothie but I’m eating it instead of drinking it. This recipe is very clean and makes fluffy pancakes. No refined flour or sugars are used and is packed with spinach. This is also a great recipe for picky eaters. They won’t know that they are loaded with a vegetable. Try making these for your whole family. I cut them up into small pieces for Emma and she devours them. So delicious!
Green Smoothie Pancakes
- 3/4 cup oat flour
- 1/2 cup almond flour
- 1/4 cup coconut flour
- 3 eggs
- 1 banana
- 2 cups spinach
- 2 tbsp plain greek yogurt
- 1 cup almond milk
- 1/2 tbsp cinnamon
- 1/2 tsp vanilla
- 1 tsp baking soda
Blend together almond milk, spinach, banana, greek yogurt, vanilla and cinnamon.
In a large bowl, mix together flours and baking soda.
Mix smoothie into dry ingredients. Add egg and mix well until smooth.
Let batter sit for 5 minutes.
Grease pan or griddle wit coconut oil.
Measure about 1/3 cup batter at a time and fry on both sides. Fry for about 2-3 minutes on each side.
Top with strawberries and maple syrup or any other favorite toppings.
