Blueberry Donuts

So I have a confession, I have a huge sweet tooth. I love chocolate and all sorts of sweets like ice cream, cake, cookies, brownies, and donuts. Yes! I love donuts! My very first job back in high school was at Dunkin Donuts. It was like an all you can eat donuts and lattes buffet. Since most of us can’t keep the metabolism we had in high school into our late 20’s early 30’s, I like to keep my treats clean and guilt free. Again, I still do have my cheat days and will have a piece of regular cake at a birthday party. The important thing is to indulge in moderation.

These are eating habits that I am trying to instill in my daughter from this very early age. To me it is very important for my daughter to learn the importance to lead a balanced and healthy lifestyle. I want her to appreciate real, fresh and clean food. All whilst knowing that having a piece of cake or a bit of ice cream on occasions won’t hurt. The thing is that while ordinary sweets are delicious and comforting, I do prefer clean sweets. At this point of my life I just don’t like dealing with the upset stomach that comes from sugary sweets.

Blueberry Donuts

  • 3 eggs
  • 1/2 cup almond milk
  • 1 cup almond flour
  • 1/2 cup oat flour
  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 cup plain greek yogurt
  • 1 cup blueberries
  • pinch salt


  1. Preheat oven at 375 degrees.

  2. In a large bowl, combine almond flour, oat flour, baking soda and salt.

  3. In a separate bowl mix eggs, milk, maple syrup, coconut oil, greek yogurt, and vanilla extract.

  4. Mix wet ingredients into dry ingredients until smooth.

  5. Grease a donut pan and scoop batter into each donut mold.

  6. Evenly distribute blueberries into each batter filled donut mold.

  7. Bake for 18-20 minutes or until toothpick comes out clean. Let cool and enjoy.

  1. Those look delicious, and so pretty too! I bet these would be great to freeze and heat up on a busy morning, put in a snack bag, or take on a hike. I’ve never made donuts but these seem doable.

  4. I love blueberries, and love donuts but I can’t seem to have anything that has blueberries baked for some reason (like muffins!). These look amazing but I don’t know why I wouldn’t eat them sadly, but I am keeping the recipe for my hubby or I will switch the blueberries with another fruit or chocolate 😉
