If I recall correctly, it was a snowy Sunday night in the middle of February. I was sitting on my couch watching TV with my husband and all of a sudden I got a hankering for tomato soup and grilled cheese. I know, so random! As most of you may know by now, I am a healthy eater and don’t particularly eat take out or junk food. However, I have learned to listen to my body and a little tomato soup and grilled cheese never hurt no body! So, I gave in to my cravings and had my amazing husband get up from our comfy and warm couch and go out in the snow to get me some tomato soup and grilled cheese. I know he’s the best! He didn’t know where to get that around here however. So he just ended up going to the grocery store and getting me a can of tomato soup and stuff to make grilled cheese at home.
The next morning not only did I wake up needing to drink two bottles of water from all the sodium in that can of soup, but I also woke up with some inspiration and some ideas running through my mind. Grilled cheese could be a great finger food for my baby girl. But, how could I make this a healthy and nutritional option?
Have you heard of cauliflower crusted pizza? Why not make the bread out of cauliflower for a grilled cheese using the same concept as in a cauliflower crusted pizza? So, I got to cooking and experimenting. Then, I wanted to make it as healthy as possible and that’s when I decided to add spinach to it. I try my best to incorporate something green in every meal. Adding spinach to these gave them the additional nutritional value I was looking for.
Emma absolutely loved them and couldn’t get enough of them. I really enjoyed eating them too and actually thought they would make a great appetizer for adults. You can make them for everyone to enjoy while watching a game or at a dinner party. Perfect way to keep it healthy and enjoy a delicious appetizer the whole family can enjoy. You can also shape the breads into a bigger size and make a regular sized grilled cheese. So next time you have a craving for grilled cheese like I did you can have a healthy option.
Mini Cauliflower Grilled Cheese with Spinach
- 1 large cauliflower head
- 1 cup shredded mozzarella cheese
- 1 tbsp dried oregano
- 1 tbsp dried basil
- 1 Egg
- salt & pepper to taste
- 3-4 slices of swiss cheese
- 8-10 spinach leaves
Preheat oven at 350 degrees.
Chop Cauliflower head and pulse in a food processor or blender into small pieces.
In a large bowl combine Cauliflower with mozzarella cheese, oregano, basil, egg, and salt & pepper if using.
Align a cookie sheet with parchment paper. Use an ice cream scooper to scoop out Cauliflower mixture. With your hands shape scoop into a small square. Don't thin out too much. Mixture makes about 12 mini breads.
Bake mini breads for 25 minutes. Let cool down.
Take a couple of cheese slices ( I used Swiss cheese) and cut into 4 smaller pieces. Grab a few leaves of baby spinach. Wash, dry well and chop into small pieces.
Take 2 mini breads and construct sandwiches with small pieces of cheese and chopped spinach. Add as much as you prefer of each between breads.
Grease a small pan or griddle and grill sandwiches like a regular grilled cheese. Don't forget to flip over to other side.
