Broccoli and Cheese Quesadillas

With the warm weather coming up here in New England, quick and easy meals are a must. Also, meals that don’t require the oven to be used or even the stove for that matter. When I thought of this recipe, I had in mind the fact that I could cut this up into very small pieces very easily and feed them to my little Emma. The first time I made these and fed them to her she actually had a great time picking up the pieces and feeding herself. She was very fast at grabbing pieces off her plate and putting them in her mouth. Not shy at all with her food.

Now, this is a great recipe for a busy hot summer day. If you have a griddle it will make your life even easier. These are even great to make ahead and freeze for a quick lunch or dinner. My favorite part about this recipe however, has to be the heathy twist it gives to a classic cheese quesadilla. I love cheese quesadillas, they don’t even have to have chicken in them for me to eat them all day! But the broccoli and carrots in these add some essential vitamins and minerals to your little one’s meal and they may not even notice they’re in there.

Broccoli & Cheese Quesadillas

Prep Time 5 minutes
Cook Time 15 minutes
Total Time 20 minutes
Servings 6


  • 1 broccoli head
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded carrots
  • 6 whole wheat tortillas


  1. Steam Broccoli for 15 minutes.

  2. In a food processor or blender, shred Broccoli into small pieces.

  3. In a large bowl, combine Broccoli, cheese and carrots.

  4. Take one tortilla and add mixture to one side. Fold tortilla in half and fry on pan or griddle. Repeat with another tortilla.

  3. I got really excited because in the picture, it looked like guacamole, which I loooooove! I will have to try this. I’ve never thought of putting broccoli in a quesadilla and I bet it’s delicious.
